I am still surprised that you can put silicone or paper in the oven and it doesn't start a fire! These silicone baking mats are ideal for me because I don't use oil to cook with and especially for cookies. But, I often have cookies that stick to the metal pan. So I made some cookies because I had to see for myself how they work. I made some molasses cookies, baked at 375 degrees for 8 minutes. The cookies lifted off of the sheet clean. I was amazed that the silicone stayed cool to touch. The great thing about this mat is that it washed spotless with soap and water, leaving no cookie residue and there is no sheet pan to scrub. I will certainly be using these for baking all of the time.
They were a little bit wide for my sheet pans but they worked very well even if they were bent up at the edges.
