I love going to new restaurants to try out different flavors, atmosphere, and fellowship. Usually, it's Italian, Mexican, Mediterranean, or Asian. Thanks to Sam Kuma I can now make tantalizing vegan dishes at home and know exactly what ingredients are healthy for my lifestyle.
I love Italian foods but I have given up cheese. One my favorite dishes is Fettuccini Alfredo and it's just not the same without the cheese. But, Sam has a recipe for Alfredo sauce that contains no dairy and I can't wait to try it. To go along with the Fettuccini is Tiramisu with strawberries. I can see a special dinner coming up soon!
My favorite go-to snacks are guacamole and salsa. I have to try out the Black Bean Guacamole and the Mango Salsa with Peaches along with the recipe for Burritos or Enchiladas. I'm in heaven!
Now for the Asian recipes. Spring Rolls. Need I say more? I have had them lots of ways but they are the best summer snack or lunch. I'm going to make it into a Spring Roll Bowl with lettuce and I'll be set for the day. Although, topping it off with Griddled Pineapple and caramel sauce is very tempting.
Finally, we're onto the Hummus and Baba Ganoush recipes in the Mediterranean book. Absolutely my favorites because of the ease of preparation. Italian Wedding Soup or Onion Soup will be fantastic for the cold winter days that are upon us now.
All of the recipes are easy to follow and don't require specialty ingredients. No matter what diet you are on, it's just healthy food for your body. This collection is a perfect addition to my kitchen.
